Friday Night Pizza Party
I love cooking and nothing is better than a good homemade pizza. Below are 3 recipes that are my absolute favourites.
First start with a base - I like to use Laucke Crusty White Bread mix. Just follow the packet instructions and you'll have enough dough for probably about 8 people very generously.
Slow Cooked Lamb, Feta and Roast Vegetable Pizza: This recipe is one that I feel I have perfected over the years. Firstly cover the base with roasted tomatoes, smearing them to make sort of a sauce covering the dough. Then add a sprinkle of mozzarella and arrange the roast vegetables and lamb over the base. Finish off with feta, another sprinkle of mozzarella and some toasted pine nuts. Cook at 200 degrees for 12 minutes or until golden and crispy. Once out of the oven, add coriander, pomegranate and dollops of 1/4 tahini and 3/4 greek yoghurt to the top and enjoy!
Potato and Rosemary Pizza: Cover the base with a drizzle of olive oil and arrange very thinly sliced potatoes on top. Cover with a layer of mozzarella and a sprinkle of parmesan. Finish off with a spring of rosemary torn over the top and a generous grind of salt. Cook for 12 minutes at 200 degrees.
Proscuitto and Cherry Tomato Pizza: Cover another base in tomato paste and a sprinkle of cheese. Tear prosciutto and spread over the pizza along with a handful of chopped cherry tomatoes. Finish off with some torn mozzarella and cook at 200 degrees for 12 minutes.
