The Best Chocolate Mud Cake
No false claims here, it truly is the best mud cake in existence. There's no pretending its good for your body but its good for your heart. It's super easy to make and always a crowd pleaser!
- 250 g of butter
- 200 g of dark chocolate
- 2 cups of sugar
- 125 g of self raising flour
- 1/4 cup of cocoa
- 2 eggs
- 1 & 1/4 cups of hot water.
Firstly, melt the butter and chocolate in a bowl over a pan of hot water. Then add sugar and mix well. Add the flour, cocoa and mix. Then add eggs, stirring between each one. Add the hot water and then divide into 2 tins.
Cook for 50 - 60 minutes at 170 degrees. Stand for 10 minutes before turning out onto a wire rack.
Serve with fresh cream and berries and a sprinkling of icing sugar! Or top with a rich chocolate ganache (200g of chocolate and 4 tbsp of double cream melted together).
